Nigerian Zobo is a hibiscus drink, not one rigid formula. Families and vendors make it differently, so think of this as a flexible starting method rather than the definitive recipe.
What you need
Start with dried hibiscus calyces, water, fresh ginger, and sweetener to taste. Optional additions include cloves, pineapple peel or chunks, orange or lemon peel, and other warming spices.
A simple method
- Rinse the dried hibiscus thoroughly.
- Add it to a pot with water, sliced ginger, and any optional spices or fruit.
- Bring to a gentle simmer, then steep until the liquid is deeply colored and tart.
- Strain carefully, sweeten while warm if desired, and chill completely.
- Taste before serving and adjust with water, citrus, or sweetness.
