Zobo vs bissap vs sobolo vs sorrel: what is the difference?

Zobo, bissap, sobolo, sorrel, and agua de Jamaica belong to a broad family of red hibiscus drinks. They often share a tart fruit character and a deep ruby color, but they are not simply five names for one fixed recipe.

Where the names are used

Zobo is widely used in Nigeria. Bissap is strongly associated with Senegal and neighboring parts of West Africa. Sobolo is common in Ghana. Sorrel is especially familiar across the Caribbean, while agua de Jamaica is the Spanish-language name widely used in Mexico and Central America.

How the recipes differ

Each tradition starts with hibiscus but may add different combinations of ginger, cloves, pineapple, citrus, mint, spices, or sweetener. Recipes also vary by household. The useful connection is hibiscus; the important distinction is that every name carries its own place and context.
